TARTE AU SUCRE D’ÉRABLE 🍁

Our take on the classic sugar tart.

We made the tart dough using rendered Berkshire pork lard following Rogers’ Mémère’s pie dough recipe.

The filling is a rich blend of maple, cassonade, and cultured kefir cream. The cultured cream gives the tart a nice tang, balancing what’s usually a very sweet treat!

Featured as part of our Easter Sugar Shack Box this past weekend.

In Banyuls-sur-Mer, we met Marc from @primavin_vinvivant — a connection that has grown into a collaboration we’re thrilled to share!

Join us at @lapetiteprimerose March 1 & 2 for a menu inspired by the Pyrénées, made with Québec and Canadian ingredients, paired with wines from small Pyrénées & French producers.
 We’re featuring some of our favourite ingredients, like vinegar from @vinaigrerie_la_guinelle_ & fish sauce from @oldhabitsfermentationco

Our version of this classic Alpine dish originating from the Aosta Valley in Italy, made with Canadian ingredients.
Alberta beef from @acmemeatmarket is cooked slowly with wine, onion and spices. Ours is topped with a @vangarderenranchflour spelt fazoletti sheet, rendered bone marrow, charred cipollini onions & mushrooms dressed in sunchoke vinegar.
